Confession: my detox started today and not yesterday. I had an unexpected birthday party to attend and the indulgences were rampant. Today I shake it off and give it a go with these awesome baked chickpea nugget/patties. Vegan, of course.
A can of chickpeas, breadcrumbs, ground golden flaxseed, small onion, some carrots, chipolte seasoning (i like McCormicks), random chicken seasoning (is vegan, but is marketed to use on raw chicken as a dry rub), tahini, or seseme paste (is homemade, will blog about it later). Quantities are not exact, it is suited to taste. The random chicken seasoning has dehydrated onion and garlic, cayanne pepper flakes as well as salt and pepper.
There is no egg in these. I use a tablespoon of ground golden flaxseed and three tablespoons of water to make an emulsion that binds and adheres the nugget/patties together,
Using my Vitamix (gadget Santa brought me YAYYY) I ground all the ingredients up. Oh, dont forget to drain the liquids from the can of chickpeas. Its very dry so you do need some sort of food processor or high powered device to mush it all together.
I used a sillicone mat, but you could use a lightly greased cookie sheet too. Blob a heaping tablespoon like you would to make cookies. I baked them at 350 degrees for 40-45 mins. Let them cool before you remove, they firm up more and will be easier to get off mat/cookie sheet.
Wrap them up with some sliced tomato, avocado, spinach or whatever you wish. This one was my husband's so you will see a slice of cheese lurking under one of the nuggets/patties. Mine did not have cheese, as it is not part of the approved foods on the detox program.
